95ptsCW We are excited about the 2007 Caymus as this vintage is reminiscent of the legendary 1994 vintage which scored 95ptsWS!. It has the same lush fruit flavor of the 2002 and 2003 vintages with a well balanced tannin structure. The color is very dark with a purple core. The nose has a beautiful perfume of blackberry and blueberry. Rather expansive in the massive mid-palate, this is a dense and chewy Cab. With a hint of semi sweet cocoa then finishing with a deliciously savory hint of lightly toasted caramel. The finish has a magnificent tannin structure and that allows for early drinking, but the massive nature of this great wine will age beautifully and reward you for years to come.
Wine Spectator Vintage Chart Rating for 2007 Napa Cabernet Sauvignon 94-96pts. Early signs point to a great year. Growing conditions were mild and even, with a good crop size. Caymus was rated as the top Cabernet producer with more ratings in the mid to high 90s than any other Cabernet. To quote from the magazine: "So who makes Napa's best Cabernets year in and year out? This Cab offers a rich perfume of plums, cherries, wild berries and cedar as well as dark, decadent flavors of blueberries, cassis, cocoa and spice. This vintage experienced a 20% reduction in crop yield. Having less fruit automatically enables the grapes to develop more concentration, which is exactly what happened here. Not only are the wine’s tannins sweet and mature from the extended growing season, the flavors are ripe, lush and prolonged on the finish because of the fruit’s immense concentration. This wine will drink well now while young, but it also has the structure to develop even more complexity in years to come.
